Pan Fried Sausage and Potato

The juices from the sausage mix well with the potatoes creating a soft potato that almost melts in your mouth.

INGREDIENTS

  • 1 lb. Johnsonville Mild Italian Sausage
  • 8 medium potatoes
  • 1 large onion
  • salt and pepper; to taste
  • 1-2 head of garlic
  • parsley
  • oregano
  • olive oil

DIRECTIONS

  • Cut sausage into 1 in. peices.
  • Cube potatos into 1/2 1 in. cubes.
  • Cut onion in 1/2 and then slice, making onion strips.
  • Peel and chop garlic.
  • Warm skillet or chicken fryer until pan is warm. Coat with oil so that entire pan is covered.
  • Put potatoes, garlic and onion in pan tossing to cover with oil. Cover pan and cook for about 5-10 min. on medium.
  • Add sausage and remainder of ingredient's seasoning to taste. Cook covered for about 30 min. until potatoes are soft. Cook longer for softer potatoes making sure to toss every once in a while.
