Sweet & Spicy Oodles

I first made this recipe in college when I ran out of chicken. Little did I know, I'd create an addiction & masterpiece! My sweet and spicy oodles became a hit with my roommates and later on my husband! I love making them and serving the dish cold on a hot summer night or piping hot on a cold snowy afternoon. The flavors in this dish can satisfy every bud leaving you craving nothing more but dessert!


  • 7 Tbsp. unsalted butter
  • 1 lb. (16 oz.) elbow macaroni
  • 1 small onion; finely chopped
  • 2 stalks celery; finely chopped
  • 3 cups Johnsonville Sweet Ground Italian Sausage crumbs; cooked
  • 2 cloves garlic; minced
  • 3/4 cup Buffalo wing sauce
  • 2 Tbsp. flour
  • 2 tsp. dry mustard
  • 2 1/2 cups half-and-half
  • 1 lb. (16 oz.) yellow sharp Cheddar cheese; cut into 1 in. cubes
  • 8 oz. Pepper Jack cheese; shredded
  • 2/3 cup sour cream
  • 1 cup breadcrumbs
  • 1/2 cup crumbled Blue cheese
  • 2 Tbsp. fresh parsley; chopped


  • Preheat the oven to 350°F and spray a 9 X 13 in. baking dish with cooking spray.
  • Bring a large pot of salted water to a boil; add the pasta and cook until al dente, about 7 min. Drain.
  • Meanwhile, melt 3 Tbsp. butter in a large skillet over medium-heat. Add the onion and celery and cook until soft, about 5 min.
  • Stir in the Johnsonville Sweet Ground Italian Sausage and garlic and cook 2 min.
  • Then add 1/2 cup hot sauce and simmer until slightly thickened, about 1 more min.
  • Melt 2 Tbsp. butter in a separate sauce pan over medium heat. Stir in the flour and mustard until smooth. Whisk in the half-and-half and add the remaining 1/4 cup hot sauce and stir until thick, about 2 min.
  • Whisk in the Cheddar and Pepper Jack cheeses, then whisk in the sour cream until smooth.
  • Combine the meat mixture, cooked pasta, and cheese sauce and toss to combine. Put the remaining 2 Tbsp. butter in a medium microwave-safe bowl and microwave until melted.
  • Stir in the breadcrumbs, blue cheese and parsley.
  • Sprinkle over the macaroni and bake until bubbly, 30-40 min.
  • Let rest 10 min. before serving.
