Orange Balsamic Piperade with Italian Sausage

It's easy to make and offers an interesting variation to a more traditional tomato sauce, which compliments the sausage very well.


  • 3/4 cup red onion
  • 1 red Bell pepper (1 1/2 cups)
  • 1 yellow Bell pepper (1 1/2 cups)
  • 1 green Bell pepper (1 1/2 cups)
  • 2 cloves garlic
  • 1 tsp. dried oregano
  • 1 tsp. dried basil
  • 1 can (14.5 oz.) diced tomatoes
  • 1/2 cup orange juice
  • 2 Tbsp. Balsamic vinegar
  • salt and black pepper; to taste
  • 5 Johnsonville Hot Italian Sausage Links


  • Cut the sausage links into 1/2 in. diagonal slices.
  • Heat up 1 Tbsp. olive oil in large skillet, brown link slices and then set aside.
  • Thinly slice red onion and sautéed in 2 Tbsp. olive oil in same skillet.
  • Slice peppers in 1/2 in. strips and add to onions.
  • Slice garlic cloves and add to peppers along with the oregano and basil.
  • Add some salt at this point and continue to cook for about 10 min.
  • Add can of tomatos, orange juice and balsamic vinegar.
  • Let cook for another 10 min. stirring occasionally, then add sausage.
  • Cook for another 10 min. until peppers are soft and and liquid is reduced by 1/3.
  • Add salt and black pepper to taste for final seasoning.
  • Serve with white rice or favorite pasta.
